Spicy Tomato Soup with Meatballs and Cilantro Recipe

Ingredients
For Meatballs:- All purpose flour (1tbsp), eggs (2), ground cumin (1/4tsp), garlic powder (1/4tsp), pepper (1/4tsp), salt (1/2tsp), uncooked rice (1/4c), ground beef (2 ½ pounds)
For Soup:- Stemmed, seeded and finely chopped Serrano chilies (6), sliced tomatoes (2), sliced onion (2), vegetable oil (2tbsp), uncooked rice (1/4c), water (2 ½ quarts), tough stems removed, finely chopped cilantro (1 bunch).

Method of preparation:-
spicy-tomato-soup-with-meatballs-and-cilantroFor Meatballs :- Take a large bowl, mix ground beef, flour, garlic powder, eggs, salt, pepper, rice and cumin in it. Mix all these ingredients properly. Make the small balls of this mixture.
For Soup:- Take a large pot, place it over high heat and then boil water in it. When the water gets boil then add rice and meat balls in it and again boil for 30 minutes. Remove the scum if it rises on the top. Take a frying pan of medium size, place it over medium heat and then heat oil in it. Sauté onions, 1/6th of chilies and tomatoes in oil for about 5 minutes or until the onions get soft. Add this mixture to the broth and meatballs and then add the remaining chilies. Turn down the heat to low and then keep it to simmer for about 10 minutes. When the soup gets ready then adds chopped cilantro in it. Serve the soup with fried beans and tortillas.
