Chilled Coconut Soup Recipe

Canned coconut milk (1 2/3c), heavy cream or half and half (1c), sugar (1tsp), salt (1/2tsp), cilantro (small bunch), fresh chicken stock (1 2/3c), unsweetened dry shredded coconut (2 2/3c), milk (5c), ground white pepper (1/2tsp).
Method of preparation:-
Take a large saucepan, pour milk in it. Place the pan over heat and keep the milk to boil. Reduce the heat to low, add coconut in it and keep it to simmer for about 30 minutes. Put the mixture with a spoon into the food processor and blend it until the mixture gets smooth. Now pour the blended mixture into the pan and then add the coconut milk in it. Mix cream, chicken stock, sugar, salt and pepper in it. Keep the mixture to boil. Reduce the heat to low and cook it for about 10 minutes. Mix the chopped cilantro into the soup. Take a large bowl, pour the soup in it and Cover the bowl. Keep it in the refrigerator until the soup gets chilled. Now pour the soup in chilled bowls and garnish it with cilantro leaves and then serve it.
