Albondigas Soup Recipe

One of the most delicious soups that one can prepare at home in no time.

Ingredients of the Recipe:
1. 1/2 cup white rice
2. 1/4 pound pork sausage
3. 1/2 teaspoon dried oregano
4. 1 egg beaten
5. 1 pound lean ground beef
6. 1/4 cup chopped fresh basil
7. 1/4 teaspoon ground black pepper
8. 1 onion chopped
9. 1/4 teaspoon garlic powder
10. 1/4 cup milk
11. Two 14.5 ounce cans of peeled and diced tomatoes
12. Six 14 ounce cans of beef broth
13. An 8 ounce jar of salsa
14. 1/2 teaspoon dried basil
15. 1/2 teaspoon salt
16. 1/4 teaspoon ground black pepper
17. 1/2 cup cornmeal

Method of Preparation:
1. Mix salsa, beef broth, onion, dried basil, oregano, tomatoes and 1/4 teaspoon pepper. If condensed beef broth is being used then remove the salt from the meatballs and use all cans of broth except for one and add one quart water.

2. Allow to boil and stir it gently for 20 minutes. Mix cornmeal, milk, salt, onion, ground chuck, sausage, egg, 1/4 teaspoon pepper, garlic powder and fresh basil and stir. Shape it into small balls.

3. Put the rice and the small meatballs in the broth and boil gently while covered one and a half hours.
