Mexican Potato Salad Recipe

Ingredients
Peeled and cut into ΒΌ inch cubes potatoes (4), sliced green olives (8large), trimmed and thinly sliced radish (12), chopped cilantro leaves (3/4c), freshly ground black pepper (1/2tsp), salt (1/2tsp), olive oil (2tbsp), cider vinegar (2tbsp), chopped cilantro leaves (3/4c), trimmed and minced scallions (4), Stemmed, seeded and coarsely chopped pickled jalapenos (2), Dijon mustard (1tbsp).

Method of preparation:-
mexican-potato-saladTake a pot, put the pieces of potatoes in it. Add water in the pot to cover the pieces. Place the pot over heat and keep it to boil. Turn down the heat to low and keep it to simmer for about 8 minutes or until the potatoes get soft. Drain the potatoes and keep them aside to cool for 15 to 20 minutes so that they get dry. Now place them in a large bowl. Add mustard in it and mix them. Now add all the remaining ingredients and mix them properly. Now serve the potato salad at room temperature or keep the salad in the refrigerator to chill it and then serve it.
