Mexican Corn Salad Recipe

Ingredients
Whole corn Kernels, cooked (2c), jalapeno pepper, seeded and minced (1), chopped fresh cilantro (2tbsp), butter (3tbsp), salsa (1/2c), diced red bell pepper (1), chopped zucchini (1c).

Method of preparation:-
mexican-corn-saladTake a large pan, place it over heat. Add butter in the pan and melt it. When the butter gets melted then adds corn, bell pepper, jalapeno pepper, zucchini and green onions in it. Fry all the vegetables in butter until they get soft. Take off the pan from the heat. Transfer the vegetables to a bowl. Keep the bowl in the refrigerator for sometime. Take salsa and chopped cilantro; mix them into the vegetable mixture. Mix these entire well and then season the salad with salt and pepper. Now the corn salad is ready to serve.
