Chicken Tostada Salad Recipe

Flour tortillas (6large), vegetable oil, divided (5tbsp), salt (1/4tsp), boneless, skinless chicken breast halves (6 about 1 ½ pounds), chopped tomato (1), shredded lettuce (2c), shredded hot peppers cheese (8 ounces), coarsely chopped red onion (1/2c), corn, drained (1can about 7 ounces), rinsed and drained black beans (1 can or 15 ounces), salsa (3/4c), red wine vinegar (1/3c), chili powder (1/2tsp), ground cumin, divided (1tsp).
Method of preparation:-
Take a small bowl, add vegetable oil of 2 tablespoon in it and then add chili powder and cumin in it. Then apply it on the both sides of each tortilla. Place these tortillas on grid over medium- hot coals. Now grill the tortillas from both sides until they get crispy and turn golden brown. Now take off the tortillas from heat and keep them to cool. Take a bowl of medium size, mix vinegar with remaining 2 tablespoon of vegetable oil. Mix salsa, salt and left over cumin of ½ teaspoon. Keep about ¾ cup of it for dressing. Now take chicken and place it grid and then grill it for about 10 to 12 minutes. Turn the sides of the chicken while grilling it and apply he salsa mixture on the chicken occasionally. Grill the chicken until it changes its color to pink. Then cut the chicken into pieces. Take a bowl of medium size, mix corn, beans, tomato, onion and dressing in it. Now take salad plate, place the crisped tortilla on it. Place the shredded lettuce, mixture of beans, sliced chicken and then shredded cheese on the tortilla and then serve it.
