Veggie Brown Rice Wraps Recipe

Salsa leaves its special taste to the brown rice recipe.

Ingredients of the Recipe:
1. frozen corn thawed (1 cup)
2. sliced fresh mushrooms (1 cup)
3.  ground cumin (1/2 teaspoon)
4. olive oil (1 tablespoon)
5. red or green bell pepper diced (1 medium)
6. eight inch flour tortillas warmed (6)
7. A 16 ounce can of kidney beans rinsed and drained
8. minced garlic (2 cloves)
9.  salsa (3/4 cup)
10. chopped green onions (1/4 cup)
11. cooked brown rice (2 cups)
12. pepper (1/2 teaspoon)
13.  salt (1/4 teaspoon)
14. shredded reduced fat Cheddar cheese (1/2 cup)

Method of Preparation:
1. Fry mushrooms, red pepper and garlic in oil until they become soft.

2. Add pepper, kidney beans, green onions, corn, rice, cumin and salt. Stir well and cook for 6 minutes.

3. Sprinkle about 3/4 of a cup on each of the tortillas. Put cheese and salsa on it and fold sides of tortilla to close it.
