Quick Mexican Rice Recipe

1. Instant rice (1c)
2. chicken broth (1/2c)
3. bacon drippings (1tbsp)
4. garlic clove (1)
5. ground cumin (1/8tsp)
6. stewed tomatoes (1can)
7. salt (1/2tsp)
8. chili powder (1/2tsp)
9. onion (1medium)
Method of preparation:-
1. Take onion, cut it into 2 halves. Take first half and finely chop it. Then take the other half of onion and cut it into very thin slices. Take garlic, mash it with salt to make the paste of it.
2. Take a saucepan of medium size, heat the bacon drippings in it and then add garlic paste and onion in the pan. Keep it to cook and stir until the onion gets tender.
3. Now add chicken broth, cumin, stewed tomatoes and chili powder in the pan. Mash the tomatoes with the back of the spoon. Keep the mixture to boil. Add rice and sliced onion.
4. Reduce the heat to very low heat, cover the pan and keep the rice to cook for about 15 to 20 minutes. When the liquid gets absorbed then the rice gets ready to serve. Serve them hot in a serving dish.
