Mexican Rice Tart Recipe

For Crust:- Long grain rice (1 1/4c), sliced green onion (2tbsp), egg whites (2), olives, black, ripe and sliced (2tbsp).
For Filling:- Shredded chicken breast (1c), ripe and sliced black olives (2tbsp), shredded Monterey jack (1/3c), sliced green onion (2tbsp), chopped green chilies (2tbsp).
For toppings:- Sliced, black olives (1), dairy sour cream (1), picante sauce (1), chopped green chilies (1).
Method of preparation:-
For Crust:- Cook the rice according to the instruction of the package. Add salt in it. Drain the rice and keep to cool slightly. Take a small bowl, beat egg whites in it. Add green onion and olives in the bowl and then mix them. Add the egg white mixture into the rice. Take a tart pan, coat the inside of pan with cooking spray. Put the rice into the pan with a spoon to cover the bottom. Now spread half of the cheese over the crust. Take a medium size bowl, mix the chicken, green onion, chilies, olives and the picante sauce in it. Then spread it over the crust. Bake it in the heated oven for about 20 minutes. Spread the remaining cheese on the top. Again bake it for 10 minutes. Take out the pan from the oven and keep it aside. Take a serving plate, place the tart in it. Garnish the tart with chopped green chilies, sour cream and black olives. Serve it with more picante sauce, if you wish.
