Mexican Rice Pilaf Recipe

A spicy rice dish that tastes awesome.
Ingredients of the Recipe:
1 large tomato seeded and chopped, 1 onion chopped, 1 1/2 cups vegetable broth, 1 teaspoon minced garlic, 1 tablespoon vegetable oil, 1 jalapeno pepper seeded and minced, 1 1/2 cups instant brown rice, 2 teaspoons chili powder, 1 red bell pepper chopped, 1/2 teaspoon ground cumin and 1 cup shredded Monterey Jack cheese.
Method of Preparation:
Heat oil in a pan over medium high heat. Cook onion and garlic in it for 3 minutes and stir occasionally in between. Add the jalapeno peppers, rice, chili powder, broth and cumin. Boil the rice over high heat. Reduce the heat after sometime and boil gently for 4 minutes. Add the bell pepper and stir. Cover it and boil gently for 5 minutes. Add tomato and cheese to the cooked rice.
