Mexican Fried Rice Recipe

Uncooked rice (1 1/2c), salt (to taste), oil (6tbsp), chili powder (1tsp), mixed boiled vegetables like carrots, French beans, green peas (1c), chopped tomato (1), sliced capsicum (1), turmeric powder (1/4tsp), crushed garlic cloves (3), sliced white onions (2).
Method of preparation:-
Take rice, wash them and soak them in a bowl for 30 minutes and then drain them. Take a pan, sauté the rice in oil in it until get light pink in color. Add water of 3 cups, salt and then cook them. Take wide vessel, heat oil in it and then fry the onion in it until get golden brown. Add garlic in the pan and fry for few seconds. Now add turmeric powder fry for five seconds. Take out the onions from the pan. Now add the capsicum in the pan and fry for 1 minute in the same oil. Mix the chopped vegetables, tomatoes salt and chili powder and cook for about 1 minute. Now add the cooked rice and fried onions in the vessel. Mix them well. When they get piping hot serve them in serving dish.
