Mexican Chicken and Rice Recipe

Uncooked rice (1c), whole chicken breast, boned and skin removed (2), chicken broth (1can), olive oil (4tbsp), sweet basil (1tsp), frozen corn (1/2c), oregano (1tsp), frozen cut green beans (1/2c), mil and diced green chilies (1can), chopped onion (1/2c), chopped garlic (2cloves), tomato or spaghetti sauce (1c).
Method of preparation:-
Take chicken breasts, remove the cartilage or extra fat from the chicken and then cut the chicken breast into ½ inch strips. Take onion and garlic, chop them separately. Take a large frying pan, heat oil in it and then sauté the chopped onion in the heated oil for about 3 to 4 minutes. Add garlic and the chicken strips into the pan. Now add 1 cup of uncooked rice in the pan. Stir the rice and keep them to cook for 5 to 7 minutes. Now add the tomato sauce, oregano, sweet basil, chicken broth and green chilies in the pan. Mix them well. Reduce the heat to low, cover the pan and keep it to cook for about 15 minutes. Then add corn and green beans. Again cook the rice for about 10 minutes. When the rice gets cooked then tosses the green salad and serves them.
