Chicken Taco Rice Recipe

Boneless chicken breasts, cut into strips (1pound), original Minute Rice (1 1/2c0, sour cream, sliced black olives, shredded cheddar cheese (1/2c), diced green or red pepper (1med.), drained corn (1can), taco seasoning mix (1package), tomato sauce (1can), chicken broth (1can), vegetable oil (2tbsp).
Method of preparation:-
Take a large frying pan or Dutch oven, cook chicken in it until it gets lightly brown. Add tomato sauce, broth and seasoning mix, keep it to boil and then reduce the heat to low and keep it to simmer for about 5 minutes. Add corn and green pepper and again keep it to boil. Mix rice in it. Cover and take off the pan from heat and keep it for about 5 minutes. Put the rice in casserole dish and spread the shredded cheese over the rice. Now place the casserole dish in the oven and bake it for 10 to 15 minutes at 350 degrees F until cheese gets melted. Take out the dish from oven. When the rice gets cooked then sprinkles with olives and serve with sour cream.
