Baked Mexican Rice Recipe

1. Cooked white rice (3c)
2. chopped green onions (1/3c)
3. chopped fresh parsley (2tbsp)
4. chopped fresh cilantro (2tbsp)
5. cheese (1c)
6. shredded Monterey jack (1c)
7. low fat sour cream (1c)
8. corn (1c)
9. jalapenos (1)
10. diced roasted peppers (2)
Method of preparation:-
1. First heat the oven to 350 degrees F. Mix all the ingredients, reserve ¼ cup of cheese.
2. Take a casserole dish, put the mixture in the dish. Place the dish uncovered in preheated oven. Bake it for about 30 minutes.
3. Take out the dish from oven and sprinkle the reserved cheese on the top. Keep it for about 2 to 3 minutes or until the cheese gets melt. Serve the rice hot with sour cream and chopped cilantro.
