Arroz a La Mexicana Recipe

Ingredients
Rice (1c), chicken broth (1 1/2c), peanut oil (1/3c), chopped pimiento (2tbsp), shelled peas (1/4c), peeled, seeded and finely chopped tomatoes (2), basil or New Mexico chili powder ( ¼ to ½ tbsp), cumin (1/2tsp), minced garlic (2-3cloves), chopped white onion (1/3c).

Method of preparation:-
arroz-a-la-mexicana-recipeTake a large frying pan, heat oil in it and cook the rice for about 10 minutes in it until get golden. Take out the oil from the rice. Add onion, cumin, garlic and chili powder in the pan and sauté all these for about 2 minutes by continually stirring them. Add chicken broth, tomatoes, peas, pimento in the pan. Cover the pan and cook until the liquid gets absorbed. When the liquid gets absorbed then serve them hot in serving dish.
