Mexican Pumpkin Dessert Empanadas Recipe

Ingredients
For Dough:- Flour (3c), baking powder (1/8tsp), cinnamon (1tsp), salt (1tsp), vegetable shortening (3/4c), dry yeast (4 ½ tsp), water (1/3c), sugar (1/4c).
For Filling:- Can pumpkin (15oz), cinnamon (1/2tsp0, ground ginger (1/4tsp), salt (1/4tsp), sugar (1/2c).

Method of preparation:-
mexican-pumpkin-dessert-empanadasFirst heat the oven to 350 degrees F. Take an electric mixer, add water, yeast, cinnamon, sugar, baking powder in a blender. Then add half of the flour and blend it. Now add shortening and mix it well and then add the remaining flour and blend it again to form dough. Divide the dough into 4 equal parts and then make balls of this dough. Roll the dough balls about 1/8 inch thick on lightly floured surface. Take a bowl, mix all the ingredients of filling in it to make the filling mixture. Put the filling mixture in the center of each dough circle. Now fold it and then seal the eands. Take baking sheets and grease them. Place the empanadas on the sheets. Place the sheets in oven and bake for about 18 to 20 minutes or until they turn golden brown. Take out the empanadas from the oven and serve them hot or cold.
