Mexican Chocolate Cookies Recipe

Chocolate cookies that can be served on any occasion.

Ingredients of the Recipe:

1 pinch salt, 1/2 cup confectioners’ sugar, 3/4 teaspoon ground cinnamon, 1 cup butter softened, 2 teaspoons vanilla extract, 1 3/4 cups all-purpose flour, 1 cup ground pecans, 1/3 cup confectioners’ sugar, 1/2 cup German sweet chocolate grated and 1/4 cup German sweet chocolate grated.

Method of Preparation:

Mix butter and 1/3 cup confectioners’ sugar in a bowl until becomes fluffy and stir in the vanilla extract. Mix well ground pecans, flour, cinnamon, 1/2 cup ground chocolate and salt in a bowl. Add the ingredients one by one to the mixture. Use a plastic sheet to wrap the dough. Allow to get chilled for 2 hours. Heat up the oven to 325 degrees F. Form 1 inch balls from the dough and place these balls on a baking sheet. Put these in the oven and bake for 15 minutes. Let them to cool on the baking sheet and then move to a wire rack.
To make the coating, put through a sieve 1/4 cup of the ground cocoa and 1/2 cup of the confectioner’s sugar.
