Mexican Arepas Recipe

Ingredients
All purpose flour (5 ½ cups or 675gms), lightly beaten eggs (2), fresh lime juice (2tbsp), lime salt (1/4tsp), baking soda (1/2tsp), baking powder (3/4tsp), scant (1/2c), vegetable shortening (1/3c), grated piloncillo (6 ounces) or dark brown sugar (1c), orange peel (of 1 orange), water (1/2 or 125ml).
For Glaze:- Milk (1tbsp), granulated sugar (1/3c) and egg yolk (1).

Method of preparation:-
mexican-arepasFirst heat the oven to 350 degrees F and take two ungreased baking sheets. Take a saucepan, put water, brown sugar and orange peel in the pan. Place the pan over medium heat and cook it by stirring it until the sugar gets completely dissolved. Keeps it boiling until the mixture gets thicken to make the consistency of thick thread. Mix fats in it and then keep it aside to cool. When it gets cool then adds baking soda, baking powder, eggs with flour of 1 tablespoon, salt, lime juice in it. Beat this mixture properly and then add the flour in it. Mix the flour in it with your hands to make soft dough. Add water if necessary. Now roll the dough on the floured surface about ¼ inches thick. Then cut the cookies of different shapes with a cutter. Place the cookies on the cookies sheets about 1 inch apart. Take a small bowl, beat milk and egg yolk in it and then apply this mixture on the top of the cookies. Sprinkle the granulated sugar over the cookies and then bake them in oven for 25 to 30 minutes or until the cookies get crispy and turn brown in color. Now take out the cookies from the oven and them on rack to cool. When the cookies or arepas get cool then store them in air tight container.
Makes about 16 cookies of 3 inch
