Fried Mexican Cookies Recipe

1. All purpose flour (2 1/2c)
2. egg (1 extra large)
3. milk (1/2c)
4. baking powder (3/4tsp)
5. melted and cooled unsalted butter (1/4c)
6. ground cinnamon (1tsp)
7. vegetable oil (for frying)
8. sugar (1/3c)
9. salt (to taste)
Method of preparation:-
1. Take a large bowl, mix flour, butter, milk, baking powder, salt and egg in it. Mix well to make dough. Then knead the dough on the floured surface to make it soft and smooth. Make about 24 balls of this dough and place them on cookie sheet.
2. Cover the sheet and place in the refrigerator for about 20 minutes. Then roll each ball on the floured surface in circular shape of 3 inch.
3. Take a frying pan, put the oil in it for frying. Heat the oil and then put the cookies to the oil and fry them for about 20 seconds or until the cookies turn brown in color.
4. Then take out the cookies from the oil. Sprinkle the cinnamon and sugar mixture over the cookies. Serve these hot cookies.
