Biscochitos New Mexican Cookies Recipe

1. All purpose flour (6c)
2. Saigon cinnamon (1/2tbsp)
3. brandy (1/4c)
4. anise seeds (2tsp)
5. white sugar (1 -1/2c)
6. baking powder (1tbsp)
7. eggs (2)
8. shortening (2c)
9. salt (1/4tsp)
10. white sugar (1/4c for topping)
Method of preparation:-
1. Take a bowl, mix flour, salt and baking powder in it. Take another bowl, beat shortening in it with sugar of 1 and 1 half cup. Now add one egg at a time in the bowl. Then mix the 1 cup flour mixture at a time and brandy in it. Mix it well to make soft dough.
2. Place the dough on the lightly floured surface and then roll it in circular shape about 1 inch thick. Cut the rolled dough into 2 to 3 inch wide circles with a cutter.
3. Take a bowl, mix sugar of ¼ cup and cinnamon in it. Then sprinkle this mixture on the top of cookies.
4. Now bake the cookies in an oven for 10 to 12 minutes at 350 degrees F. When the cookies get lightly brown then take out them from the oven. Cool them on the rack and then serve or store them in a container.
Makes – 3 dozen.
