Boneless , skinless chicken breasts (1 1/2lbs), chicken broth (1/2c), chopped onion (1c), tomato puree (1can or 15 oz), garlic (1clove), dried ancho, pasilla or guajillo chile peppers (3), cooked rice, black beans, warm tortillas (optional), avocado slices, sour cream and cilantro leaves, garlic salt (1tsp)fresh lime juice (2tbsp).
Method of preparation:-
Take a medium size sauce pan, tear the peppers into strips and place in the pan. Add onion, tomatoes, garlic and chicken broth in the pan. Keep it to boil and then reduce the heat to low. Cover the pan and kep it to simmer for 20 minutes. Keep it to cool and then make the puree in a blender or food processor. Keep it aside. Rinse the chicken and pat dry it. Brush the chicken with lime juice and then sprinkle the garlic salt over it. Grill the chicken for about 5 minutes on each side or until the chicken gets cooked. Add sauce during the last few minutes of cooking. Place it in the plate and pour the remaining sauce over top. Serve it with wrm tortillas, black beans, rice, sour cream, avocado wedges and cilantro.
