Mexican Chicken Recipe

Ingredients
Boneless chicken breast halves (6), sliced mushroom (8ounces), thinly sliced onion (1med.), vegetable oil (1/2c), green pitted olives (12each), chopped tomatoes (4med.), chopped celery (2ribs), minced garlic (2cloves), bay leaves (2), water (1/2c), capers (2tbsp), crumbled dried leaf oregano (2tsp), pepper (1/4tsp), salt (1tsp).

Method of preparation:-
mexican-chickenTake a frying pan of about 10-inch. Heat oil in it, cook and stir onion in the oil until they get tender. Now add the remaining ingredients except mushrooms and chicken breast. Keep the mixture to boil and then reduce the heat. Uncovered the pan and keep it to simmer for about 30 minutes. Place chicken, skin side down, in single layer in the frying pan. Now cover the pan and cook the chicken over medium-low heat for about 30 minutes. Now add the mushrooms in the pan, cover the pan and keep it to cook until the chicken gets cooked about 15 minutes.
