Pecan halves or pieces (2 pounds), vanilla extract (1tsp), white sugar, divided (6c), heavy cream (2c), butter (1/2c), baking soda (1/2tsp).
Method of preparation:-
Take a dish of 9*13 inch and a saucepan of medium size. Grease them. Take the greased saucepan, mix sugar of 3 cups with cream in the pan. Keep it aside. Take a large frying pan, place it over heat. Put the left over sugar of 2 cups in it and cook it until it gets melt. Reduce the heat to low cook it until the sugar tirn light brown in color by stirring it. Now slowly pour this melted sugar into the cream. Simmer it for about 5 minutes by stirring it. Now heat it without stirring. Take off the pan from the heat and then mix the baking soda in it to get foam. Put the butter into the foaming mixture. Keep it for about 30 minutes. Add vinegar in it and mix it with high speed for 10 to 15 minutes. Then add pecans and place the mixture into the greased dish. Keep it to cool. Cut it into pieces until it is slightly warm.
