Tex Mex Beef Wraps with Tomato Corn Salsa Recipe

Two way shredded beef, warmed flour tortillas (8 about 10 inch diameter), chopped cilantro, garnish, thick and chunky salsa (1 jar about 16- ounce), chopped cilantro (4tbsp).
For Tomato-Corn Salsa:- chopped tomato (2small), chopped cilantro (2tbsp), frozen whole kernel corn defrosted (1c).
Method of preparation:-
To make tomato Corn Salsa:- Take a small bowl, mix Tomato-Corn Salsa ingredients with 2 tablespoon of thick and chunky salsa. Cover the bowl and keep it in the refrigerator until it gets ready to use.
To make wraps:- Take 1 1/2quart microwave safe dish, mix one portion of shredded beef, remaining prepared salsa and 2 tablespoon of cilantro. Cover the dish and microwave on high for 7 to 8 minutes or until get hot by stirring once. Place ¼ of beef mixture over each tortilla by leaving 1 ½ inch border on all sides. Place 1/4cup of Tomato- corn Salsa on the top of each tortilla. Fold the edges of tortilla over the filling. Then roll up as jelly roll fashion. Garnish it with additional chopped cilantro and then serve it immediately.
