Green Chili Stew

A great mexican stew recipe.

Ingredients of the Recipe:

Salt to taste, ground black pepper to taste, 1 tablespoon vegetable oil, A 10 ounce can of diced tomatoes with green chile peppers, 1 1/2 cups beef broth, A 4 ounce can of chopped green chile peppers, 2 pounds cubed beef stew meat, 1 onion chopped, 1 teaspoon garlic salt, 1 teaspoon ground cumin and 2 large potatoes peeled and cubed.

Method of Preparation:

Heat oil in a pot over medium heat and fry the stew meat until it turns brown. Add the onions and cook until the onions become translucent. Add the diced tomatoes with chiles, beef broth and chile peppers. Add garlic, salt and cumin. Add salt and pepper to taste. Allow to boil for some time and then reduce the heat and cook gently for an hour. Add some more beef broth or water while cooking if the need be. Add the cubed potatoes to the mixture and cook for 30 minutes.
