Firehouse Machaca Taco Filling Recipe

Excellent meat stuffing.

Ingredients of the Recipe:
1. 1 cup chopped onion
2. 1/2 cup chopped green bell pepper
3. 2 tablespoons vegetable oil
4. 1 cup green salsa
5. 1/4 cup chopped fresh cilantro
6. 2 quarts water
7. 3 pounds beef chuck
8. 1 small onion quartered
9. 1 tablespoon chopped jalapeno pepper

Method of Preparation:
1. Mix water, beef and quartered onion in a pot. Allow to boil for some time and then reduce the heat to medium low. Cover the pot and cook gently for 2 hours. Strain the broth and reserve it.

2. Cut the meat using a knife and then put it aside. Heat oil in a pan. Fry the onion and bell pepper until they become soft. Add the reserved broth, cilantro, jalapenos, shredded beef and salsa and stir well. Cook for 5 minutes and stir occasionally in between.
