Beef Enchiladas Recipe

Ingredients
Ground beef (2lbs), corn tortillas (12), diced onion (1/2med.), bell pepper (1/2diced), cumin (1tsp), chili powder (2tbsp), salt (1tsp), paprika (2tbsp).

Method of preparation:-
beef-enchiladasTake a 2 quqrt. Sauce pan. Add ground beef, garlic, cumin, paprika, chili powder and salt in it. Add enough water to cover the meat. Keep it to boil. Keep it to simmer over medium low heat for an hour. Then add ½ medium chopped onion, ½ medium chopped bell pepper zand cook it for 20 to 30 minutes. Take a frying pan, heat oil in it on medium high heat. Cook corn tortillas one at a time in the hot oil until it gets soft for about 5 to 10 seconds. Drain and keep the tortillas aside until cool enough to touch. Add about 2 tablespoon of beef mixture in the center of each tortilla and roll up and serve 2 to 3 to a plate.
